St Patrick's Day
Irish national dish
For the first time since I moved to Ireland, I’m in Santa Cruz for St. Patrick’s Day. My sister and I are throwing a St. Patrick’s Day party and instead of serving corned beef and cabbage, we’re serving Chicken Fillet Rolls, like you find in an Irish petrol station deli. (It’s too dang hot for corned beef and cabbage anyway.) I’ve ordered baguettes from good old Kelly’s bakery, and my sister collects little serving trays that will approximate the cornucopia of salads and condiments you’d find on a road trip.
The Irish people I know who like Chicken Fillet Rolls usually have developed a specific order that they give to the sandwich maker at the deli. My order is butter and coleslaw, and the spicy chicken.
